Avocado Soup with Macadamias

  • 2 ripe avocados, peeled, seeded
  • 1 cup low-fat cottage cheese
  • 1 cup low-fat milk
  • 1 cup chicken broth
  • 1 1/2 tsp. lime juice or lemon juice
  • 1 small garlic clove, peeled and pressed
  • 1/4 tsp. salt
  • 1 cup Sunnyland Macadamias, divided

Directions:

  1. Blend all ingredients except Macadamias in a blender until smooth.
  2. Add 1/2 cup macadamias; blend until smooth.
  3. Pour into large bowl. Chill.
  4. At serving time sprinkle remaining macadamias on top of each serving.
