Apricot Bread Recipe

Apricot Bread

Directions:

  1. Soak apricots in warm water for 30 minutes.
  2. Meanwhile, in a bowl, cream sugar, butter and egg. Stir in orange juice.
  3. Combine flour, baking powder, baking soda and salt; stir into creamed mixture just until combined.
  4. Drain apricots well; add to batter with nuts.
  5. Pour into a greased 9" x 5" loaf pan.
  6. Bake at 350° for 55 minutes or until bread tests done.
  7. Cool 10 minutes in pan before removing to a wire rack.
Serves 16.
