Joanne's Zucchini Bread

  • 3 eggs
  • 1 cup vegetable oil
  • 2 cups sugar (1 white and 1 brown)
  • 2 cups grated zucchini
  • 2 1/2 cups flour, sifted
  • 1/4 tsp. baking powder
  • 2 tsp. baking soda
  • 1 tsp. salt
  • 2 1/2 tsp. cinnamon
  • 3 tsp. vanilla
  • 1 cup Sunnyland Small Pecan Pieces

Directions:

  1. Beat eggs; add sugar, oil and zucchini.
  2. Sift dry ingredients together; stir into first mixture.
  3. Add vanilla and nuts.
  4. Pour into two greased 9” x 5” x 3” bread pans.
  5. Bake at 350° for 1 hour.
