Sweet Potato Pecan Biscuits

Makes: 15 to 18 biscuits
Cook time: 15 minutes
Ingredients
  • 2 1/2 tablespoons brown sugar
  • 1 tablespoon Sunnyland Pecan Meal
  • 1 1/4 cups all purpose flour
  • 4 teaspoons baking powder
  • 1/4 cup (1/2 stick) salted butter
  • 3/4 cup cooked sweet potatoes mashed
  • 1/2 teaspoon salt
  • 2 tablespoons milk
  • 1 tablespoon heavy cream
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla
  • 1/2 teaspoon nutmeg

Directions:

  1. Preheat overn to 450 degrees.
  2. Sift together flour, sugar, baking powder, salt and spices.
  3. In a large bowl mix sweet potatoes and butter.
  4. Add flour mixture to potato mixture and mix to make a soft dough.
  5. Add milk a tablespoon at a time.
  6. Turn dough out onto a floured board and toss lightly until outside of dough looks smooth.
  7. Roll dough out to 1/2 inch thickness and cut with biscuit cutter.
  8. Place biscuits on greased pan and coat tops with melted butter. Place biscuits somewhat close together to help them rise.
  9. Bake for 15 minutes. Watch for early browning and adjust oven temperature accordingly.
