Strawberry Pecan Jam

Ingredients

  • 16 ounces fresh strawberries
  • ¾ cups white sugar
  • 1 tablespoon fresh lemon juice
  • ¼ teaspoon fresh nutmeg
  • ¼ teaspoon cinnamon
  • ¼ teaspoon salt
  • ½ cup toasted Sunnyland pecan pieces

Instructions

  1. Combine all ingredients *except pecans* in a large saucepan and bring to a boil.
  2. Reduce to medium heat and stir while mashing strawberries.
  3. Cool until bubbles cover top of liquid (about 10-15 minutes) gently stir in *toasted pecans, cool, fill jars and refrigerate.

Sweet Citrus Pistachio Cheeseball


Sweet Citrus Pistachio Cheeseball

Ingredients

  • 16 ounces Whipped Cream Cheese
  • ¼ cup Shredded Mozzarella Cheese
  • 1 cup chopped Sunnyland Pistachios
  • ½ cup Dried Cranberries
  • 1 tablespoon Orange Marmalade
  • 1 teaspoon Basil Pesto
  • 1 teaspoon Orange Zest
  • ½ teaspoon Dijon Mustard
  • ½ teaspoon Garlic Powder
  • Salt & pepper to taste

Coating

Directions:

Mix all ingredients in a large bowl, form into a loose ball in bowl. Sprinkle some of the toppings onto a large piece of plastic wrap, pressing cheese ball gently onto toppings. Finish coating the top and sides of cheeseball with remaining toppings. Wrap with plastic wrap and refrigerate for an hour. Brush chilled cheese ball with orange marmalade and serve with your favorite crackers, apple slices or perfect with dried fruit.

Savory Bacon Pecan Cheeseball

Ingredients

  • 16 ounces Whipped Cream Cheese
  • 1 cup Sunnyland Pecan Pieces
  • ½ cup Crumbled Bacon
  • ½ cup chopped Green Onion
  • 1 cup shredded Sharp Cheddar Cheese
  • 1 ½ teaspoons Worcestershire Sauce
  • ½ teaspoon Hot Sauce
  • ½ teaspoon Garlic Powder
  • ½ teaspoon White Sugar
  • 1 teaspoon Dijon Mustard
  • ½ package Dry Ranch Seasoning Packet

Coating

Directions:

Mix all ingredients in a large bowl, form into a loose ball in bowl. Sprinkle some of the toppings onto a large piece of plastic wrap, turn cheese ball onto wrap and press gently onto toppings. Finish coating the top and sides of cheeseball with remaining toppings. Wrap with plastic wrap and refrigerate for an hour. Serve with your favorite crackers and chopped veggies.

Summertime Herb Vinaigrette

1/3 cup Sunnyland Pecan Oil

1/3 cup balsamic vinegar

2 garlic cloves minced

2 tsp. spicy brown mustard

2 tsp. Sunnyland Gallberry Honey

1 tsp. garlic powder

1 tsp. dried basil leaves

1 tsp. dried oregano leaves

1 tsp. dried parsley leaves

1 tsp. salt

1/2 tsp. ground black pepper

 

Instructions

1.      Add all of the ingredients to a sealable container. Seal and shake until well combined.

2.      Store in the refrigerator.

3.      Shake well before each use.

Orange Slice Cake

Ingredients

1 cup butter (softened)
2 cups white sugar
4 eggs
1/2 cup buttermilk
1 tsp baking soda
3 1/2 cups all-purpose flour
1 lb Sunnyland Dates (pitted and chopped)
1 lb orange (slices candy, chopped)
2 cups Sunnyland Small Pecan Pieces
1 1/3 cups shredded coconut
1 cup orange juice
2 cups confectioners sugar

Instructions

  1. Cream shortening and sugar. Add eggs one at a time, beating well after each.
  2. Preheat oven to 250 degrees F (120 degrees C). Lightly grease and flour one 10 inch tube pan.
  3. In a mixing bowl, cream margarine and granulated sugar until smooth. Add eggs one at a time, beating well after each addition. Dissolve baking soda in buttermilk and add to the creamed mixture.
  4. Place flour in a large bowl and add dates, orange slices, and nuts. Stir to coat each piece. Add flour mixture and coconut to creamed mixture. This makes a very stiff dough, so it will be necessary to stir with a wooden spoon.
  5. Pour batter into the tube pan. Bake for 2 1/2 to 3 hours. As soon as cake comes from oven, combine the orange juice and confectioners sugar and pour over hot cake. Let stand in pan overnight.
