CHOCOLATE PEANUT BRITTLE
1 1/2 cups sugar 2/3 cup water
1/2 cup light corn syrup 2 Tbsp. butter
1 1/2 cups Sunnyland Virginia Peanuts
1 tsp. baking soda 1 Tbsp. cold water
1 tsp. vanilla
1 pkg (8 squares) candy-making
chocolate, cut into pieces
Combine sugar, water and corn syrup. Place over low heat and stir constantly until sugar is dissolved. Cook until a small amount of syrup becomes brittle in cold water (or a temperature of 275°) Add butter and peanuts. Stir until peanuts are slightly browned.
Dissolve baking soda in cold water; add vanilla and stir slowly into candy. Pour out onto warm buttered 15”x10” baking sheet, spreading with spatula to cover pan. Cool.
Heat chocolate over hot water until partly melted. Remove from hot water and stir rapidly until entirely melted. Pour over peanut mixture. Cool until firm. Break candy into small pieces. Makes 1 3/4 pounds of brittle.
