BRAZILIAN LOAF
1 Tbsp. instant coffee
1 cup boiling water
1 1/4 cups Sunnyland Dates,
pitted and chopped
2 1/4 cups flour, sifted
2 tsp. baking powder
1/2 tsp. baking soda 1/2 tsp. salt
3/4 cup brown sugar 1 egg, beaten
1 large apple, peeled, cored & shredded
1/2 cup Sunnyland Brazil Nuts, chopped
2 Tbsp. butter, melted
Dissolve coffee in boiling water; pour over dates; set aside. Sift together flour, baking powder, soda and salt; stir in brown sugar. Combine egg, apple, nuts, butter and date mixture; add to dry ingredients. Stir until moistened.
Pour into greased 9”x5”x3” loaf pan. Bake at 350° for 1 hour. Cool on rack.
