CHUNKY TOMATO
AND MUSHROOM SALAD
2 cups unpeeled tomato chunks
(about 3/4 lb.)
1 cup sliced fresh mushrooms
1 Tbsp. Sunnyland Small English
Walnut Pieces
1 Tbsp. fresh basil, chopped
1 Tbsp. water 1 Tbsp. red-wine vinegar
2 tsp. vegetable oil 1/8 tsp. salt
Combine first 3 ingredients in a bowl; toss gently. Combine basil and next 4 ingredients in a jar, cover tightly and shake vigorously. Pour over tomato mixture; toss gently. Serves 6.
