SPINACH SALAD WITH CHICKEN
Salad:
2 cups cooked chicken, diced
8 oz. fresh spinach leaves,
torn into bite-size pieces
2 apples, peeled, cored and diced
1/2 cup Sunnyland Small Pecan Pieces
Dressing:
1/2 cup olive oil
1/4 cup red-wine vinegar
1 Tbsp. chives, minced 1 tsp. sugar
Salt & Pepper to taste
Place salad ingredients in a large bowl. Put dressing ingredients in a jar with a tight fitting lid; shake vigoursly to combine.
Pour half the dressing over salad; toss until well mixed. Taste; add additional dressing if desired. Serves 4 as a light lunch, 2 as the main course at dinner.
