SCALLOPS WITH WALNUT
AND SNAP PEA ORZO
1 1/4 lbs. scallops (about 24 medium
 scallops)
2 tsp. Italian seasoning    
8 oz. orzo pasta
Non-stick cooking spray
1 tsp. chopped garlic
1/2 lb. snap peas, trimmed
1/2 cup Sunnyland Small English Walnut
 Pieces, some reserved for garnish
1 Tbsp. basil-flavored oil
 Rinse scallops and dry well. Sprinkle evenly with herbs. Cook orzo according to package instructions; hold in a covered pan.
 Coat a nonstick skillet with cooking spray. Sauté garlic, snap peas and         walnuts over medium-high heat 2 - 3 min. Add to orzo; keep covered.
 Re-coat skillet with cooking spray. Sauté scallops over high heat 2 min. on each side until lightly browned.    Place scallops on plate with orzo. Drizzle a little basil-flavored oil over  scallops before serving. Sprinkle with reserved walnuts. Serves 6.
